Sweet Potato Loaf

INTRODUCTION

This is a tasty gluten free, easy to make Loaf. High in protein so a great way to start your day.

Sweet Potato Loaf

INGREDIENTS

125 g ground almonds

2 tablespoons flaxseed

½ teaspoon bicarbonate of soda

1 teaspoon baking powder

1 tablespoon cinnamon

½ teaspoon mixed spice

2 medium sweet potatoes – mashed after roasting or steaming

1 tablespoon coconut oil or olive oil

1 tablespoon honey

3 eggs

METHOD

Whisk potato, oil, honey and eggs until smooth.

Add the almonds, flaxseed, bicarbonate of soda, baking powder and spices. Mix well.

Pour the mixture into a greased 1 lb loaf tin.

Bake at 180 C for 40 minutes or until golden and firm.

Leave to cool in the tin.Delicious toasted.

OTHER OPTIONS

1. Omit  honey, cinnamon, and mixed spice and use chopped fresh herbs, such as rosemary/thyme, or tomato relish and basil with s and p.

2. Omit honey, cinnamon and mixed spice and use turmeric, cumin, salt and cayenne or paprika.

3. Try sunflower seeds instead of flaxseed.

4. Try chopped dates and walnuts instead of seeds and cinnamon.

NUTRITIONAL VALUE

The almonds, seeds and eggs provide good forms of protein which help to build and repair all body cells, particularly for our brains, joints, heart, skin, hormones and supporting our energy. Cinnamon is a good blood sugar balancer so is excellent for those who have dips in their energy and suffer from poor concentration and fatigue in the afternoons.

Sweet potato is packed with vitamin A, excellent for skin and eye health and coconut oil although a saturated fat is used by the body and converted for energy rather than being stored as fat. It actually speeds up metabolism.
