Coconut, cherry and banana loaf

This is an tasty, easy loaf to make, naturally sweetened by banana and coconut, it freezes well.

RECIPE

125g butter- melted

2 medium bananas

60g caster sugar/xylitol

100g G F flour

75g ground almonds

2 teaspoons baking powder or 1 teaspoon xanthum gum

½ teaspoon bicarbonate of soda

2 eggs

80g chopped cherries

80g desiccated coconut

METHOD

 

1.   Preheat the oven to 170C/gas 3. Line a 23 x 13cm loaf tin.

2.   Melt the butter in a saucepan. Cool a little.

3.   Peel and mash the bananas in a mixing bowl.

4.   Whisk the sugar into the saucepan with the butter. Add to the banana mixture.

5.   Add the eggs and whisk the butter, banana and eggs together.

6.   Whisk in the flour, ground almonds, baking powder and bicarbonate.

7.   Fold in the cherries and coconut.

8.   Pour into the loaf tin and bake for 45 – 50 minutes.

9.   Leave to cool slightly in the tin and then remove form the tin, place the loaf on a wire rack covered with a tea towel.

10.  Keeps for 5 days, can be frozen.
