Carrot,coconut and pecan loaf

A very easy to make, tasty carrot loaf, whatever you do, don't skip the 15 minutes proving!


2 cups of flour

2 tsp baking soda

2 tsp ground cinnamon

¼ tsp salt

1 cup sugar

1 cup raisins

½ cup flaked or grated coconut

½ cup chopped pecans, plus extra whole for decoration

1 cup vegetable oil

1 tsp vanilla extract

2 cups grated raw carrot

3 eggs




    1. Preheat oven to 160 C. Grease and line a 9” x 5” x 3” loaf tin.
    1. In a large mixing bowl, mix flour, cinnamon, b soda, salt and sugar.
    1. Add raisins, coconut, ½ cup of pecans, combine well.
    1. Add the carrots, oil, vanilla and eggs, stir using a wooden spoon until mixed. Let the mixture stand for 15 minutes.
    1. Pour the batter into the tin, scatter reserved whole pecans on top, flaked almonds look good too.
    1. Bake for 60-70 minutes.
    1. Cool in the tin for 10 minutes and place on a wire rack to cool completely.
    1. Wrap in fridge for up to 2 weeks or freeze.
