Brutta Ma Bioni/ Ugly Biscuits

These are packed with protein, great as a healthy snack and very portable, so ideal when travelling or on picnics.

2 egg whites

a pinch of salt

50g granulated sugar

300g hazelnuts


Heat the oven to 150 Fan / gas mark 4

Line a baking sheet with parchment paper, spread the hazelnuts in a single layer and toast for about 10-15 minutes, just until the skins start to come off.

You can either remove the skins or I just put the whole lot into a food processor and give them a blitz. Not too small as you do want to see some chunks of nuts.

Beat the egg white and salt in a bowl until soft peaks form.

Gently fold in the sugar and then the nuts.

Spoon onto the lined baking tray, bake until golden brown and hard. I sometimes put them in a cooler oven and then let them really dry out. Cool and devour with a coffee.

Store in a jar.
